i was wondering what's better for competing a horse to have it on a sponsor account or a novice one?
And does it hurt the horse if they are in the pasture?

As long as you have a npc rider and are competing in events where NPC riders are better than using yourself as a rider...you can use either ranch type and neither do better than the other.

how do you tell if a rider is better then yourself for a event i was looking at where the endurance horses are kept and most of the winners are on sponsor accounts

Endurance is better with a Sport NPC rider so it could do well on a novice account too...as long as you have the rider and Meths.
Gaited and Halter Showmanship are the only events where you don't want to use a NPC rider.

There are some massive endurance eventers out there right now because of Draggy's trainoff...so I think your training is fine as far as I can see...so maybe it's the horses that are running...or you could be missing a key ingredient, like the 3 I mentioned.

Yep, there's "ranges" of each. You horses might be a the lowest point of very hyper, when you want them at the highest point.
