Hi,
Can a horse still do good at events and win if they are just stat maxxed or does it help if they are event trained?

Depends on the event. Some are more random than others. Gymkhana, for example, is completely random and horses generally don't even need to be maxed to win. In other events, such as Gaited, the horse will not do well unless it is event trained.

what about jumping and dressge?

I don't event in either of those, but I believe they both require event training.
