Horses can't "die". They go into retirement at age 33.1 years. Or you can retire them from the horses page. With young horses it is called "releasing".

Horses that are retired are moved to the Retirement ranch (HappyHorse Retirement Facility ). They can still be viewed in game, but are no longer touchable (ie. once retired, stay retired. No breeding, retrieving etc). Retired horses also show up on bloodlines.

Younger horses can't be retired, but can be released. Yes, this is effectively deleting them. They no longer appear in bloodlines, nor can be viewed in the game.

Make sense? :)
