Is there a way to change them? I.e. get my arabs not to be spirited with both parents being spirited? Maybe be mellowing?

No, there isn't, other than breeding to horses with the personality that you want. If you breed horses together through the generations, it slowly changes randomly over time. I've been breeding Sea Horses for confy, and their personalities have changed from very docile to somewhat docile to somewhat tempered to spirited. . . It just. . .does. XD

Yeah you could cross them with an arab foundie and knock their temperament down that way, along with their stats lol
