Tack and shoes for Dressage horses...

Does anyone know what number saddle and bridle one should use on a dressage horse. And do you use a snaffle or curb, plus what type of shoes?

Western is the only discipline that uses a curb bit. Strength/Draft shoes. Tack numbers are here, but any tack will do:
