My answer is simple.
Is the stallion either stat-maxed or a conformation-quality horse?
If the answer is no: One breeding might be "overbred" unless you have specific goals in breeding to him (Breeding for a colour to improve it, trying to get conformation horses, etc)
If the answer is yes: There's no such thing as 'overbreeding'. Even if it's a foundation horse with pants stats, if you've stat maxed it or you're going for conformation, it's not so bad.
I recently took a miniature down from stud, foundation stat-maxed boy, who's had thirty-some-odd foals; I'll put him back up for stud once I've had a chance to roll him a bit.
