Since a sponsor can have x amount of novice ranches per sponsor, what happens if some of the sponsors expire? Since accounts don't get deleted, is there a possibility of trouble if once the sponsors expire one has more than the allowed novices per sponsor ranch?

If they continue to access the extra accounts, yes. Once a sponsor expires, you should only be accessing three of the novices, not 7. We don't go so much by how many accounts a player has created if there's a history of sponsors, but we do look at when accounts were last accessed. So if an account shows it expired Oct 11, 2010 and only 3 accounts have been accessed since then, the extra, unused accounts won't cause a problem.
