I just came back after a LONG break (Over a year), and I was wondering, what eventing/training bonuses are still actually working??

There is no such thing as eventing bonuses, bonuses now only effect to event training and breeding.
Nothing else has changed tho.
Aka if you want to event train for example for racing, youd need tenacious trainer + speediest so the speed caps .25% higher etc.

So it makes it a lot easier to train/event in all different disciplines?

yep, basically you can atleast event in all disiplines in one ranch.
of course event training needs the specific breed bonus to be able to gain the one random stat each time its trained.
so for example sporty sorts and tenacious trainer without forgetting longevity for random "did not age" procs
