Since it's jumping I would say try to find the breed with the highest strength. You may have to do a little bit of researching on each pony breed on VHR for this. But it's worth doing.
On your concern of breeding/inbreeding, I would suggest reading through this guide. It's very helpful.

You could have a mixture of symbols or letters... here are a few that could be created. I just used 3 F's.

And with individual pricing on your paints, I am not sure. There should be a few guides on how to price your horses somewhere in the tips/tricks/guides sections. Just do a little searching and you'll probably find at least one.
