this might be a reallt stupid question but ive only been playing for about 2 months so bear with me i know stats can sometimes roll during statmaxxing can stats also roll during roll prepping?

Yes they can. As soon as the horse's training score hits 450 (usually early on in training) stats begin to roll. You can tell this has happened when you take a turn, there will be writing in blue which says

'This horse has reached a statistic cap, meaning its natural stats are slowly beggining to evolve (in a positive manner). If you keep training up the horse, it will continue to gain. Since the horse has reached a cap of sorts, its actual stats start to decay or remain balanced.'
